March 11 to 13, 2016 sure was a lovely weekend! Big Bite 2016: The Northern Mindanao Food Festival at Centrio Ayala Mall truly showcased not only the flavors of summer but the undeniably skillful cooking talents of Kagay-anons. I had the chance to witness this Mindanao food festival as one of the judges for the Lifestyle Writers' Choice award for this year's Best Dish, much thanks to the Centrio Mall management and Professional Organizers. I tried about 10 dishes for the mall merchants category and about 15 (IKR :D) for outside food exhibitors. Famous Belgian Waffles. Just how "famous" and delicious are these waffles? Well, Famous Belgian Waffles Limketkai CDO is just one of the more than 100 outlets all over the Philippines and there's always a bevy of hungry and eager customers at each of their waffle stores so I guess they're doing something right! :) I got to try these delicious treats a few days ago when the CDO franchisee invited this Mindanaoan blogger for a visit. I also brought along several blogger friends and my brother, the Tennis Guru, who was also in town for a vacation. Pastel is a Spanish term for cake. And perhaps the Mindanao business that successfully introduced pastel to the market is Vjandep Pastel. The pastels produced by Vjandep are soft bread buns filled with various fillings such as yema (custard), ube, chocolate, pineapple, durian, bavarian cream etc. From a humble business that originated in Camiguin Island, Mindanao, Philippines, Vjandep Pastel now has turned into a huge corporation.
